Canning - THE obsession

Since my 'little' mistake about our tomato crop this year,
we have been swamped with ripe tomatoes.

Not that, that is a bad thing.
I am really liking the challenge of canning this year.
I felt a bit as though I needed a break from sewing and quilting.
I know,
Did I just type that?
yep, I did.
I need a break.
Having said that, I have finished quilt tops that I have sent to my quilters
 with the intention that my mojo will come back!

In the mean time, canning is the new obsession.
I have a couple of canning magazines
with a list of food I want to can.
I am trying to figure out what is the best organization of the weekends to accomplish this list.
I have canned during the week too...
I told you, it's an obsession!

Here are my first diced tomatoes.

I am proud of these guys :)

and here is my list for this fall,
well so far...it may be expanded depending on my success
  • tomato sauce
  • spaghetti sauce
  • ketchup
  • salsa
  • applesauce
  • apple pie filling
  • champagne blush jelly
  • raspberry jam
  • roasted garlic pasta sauce
wish me luck ;)

I love canning too! I did it for the first time last fall (apple butter and grape jelly) and am SO excited to do more. We're actually trying it for the first time on our own without expert supervision this weekend-pickled banana peppers!

Ooooh, your tomatoes are so lovely! Love those home-canned tomatoes when the snow flies and there's a fire on the hearth. :) Not to mention those fresh-picked, from the garden, tomato sandwiches... :D Your quilts are as lovely as your tomatoes, too. :)

*Lovely tomatoes! I do a lot of canning, too, and my husband jokes that no matter what I'm canning, "it always takes until 8 o'clock!"

There's nothing quite as satisfying as seeing a counter full of freshly filled bottles. I love hearing the "pings" as they seal. One of my all time favorite sounds!

I've been canning away the last few weeks also. So far I've done 100+ jars of salsa, lots of beans and corn, some potatoes and mixed veggies, jams and jellies. I just started on my tomato sauces and juices and will be making apple sauce and butter, hot pepper mustard, and onion relish, deer meat, and who knows what else in the coming weeks. I taught myself to can about 12 years ago with the help of my Ball Blue Book and the Canning2 group on Yahoo. Lots of great people and recipes. Happy canning and be safe with your canning techniques. Nothing quite as satisfying as seeing your hard work line up on the shelves :)
